Cavallotto's winemaking journey began in 1952, when the Cavallotto family set the foundation for their vineyard in the heart of the Barolo region. Located in the renowned commune of Castiglione Falletto, the estate is steeped in tradition, with roots that trace back to an era when quality winemaking was already beginning to define the region.

The pivotal moment for Cavallotto came when the family recognized the importance of investing in prime vineyards. Led by the Cavallotto family’s astute vision, they acquired some of the most prestigious parcels of land, cultivating vines in the prized "sorì" areas, known for their perfect terroir, ideal for producing wines of great finesse and elegance. These vineyards soon became the backbone of the estate's exceptional wines.

In the 1970s, the Cavallotto family expanded the estate further, improving the infrastructure to support their dedication to quality. They built the current cellar and fermentation facilities, incorporating the best winemaking practices of the time. It was a time of transformation, as the family adopted modern techniques while staying true to the traditional methods that define Barolo production. The family’s commitment to preserving the essence of the land and its heritage remained unwavering.

In recent decades, Cavallotto has continued to grow under the leadership of the next generation, with siblings, cousins, and family members working side by side. They continue to craft wines that honor the terroir of Castiglione Falletto and push the boundaries of excellence. By 2013, Cavallotto's commitment to quality reached new heights, with a focus on single-vineyard Barolo wines, allowing the unique characteristics of each vineyard to shine through in their expressions.
